Lettuce Turnip the Beet Another Year Later

We are excited to announce after a year long break & many miles traveled...we are back growing again!!


Bluegrass Microgreens is back in operation and we are now located in Harrodsburg, Kentucky. We are as enthusiastic as ever to begin growing again and have envisioned spreading these delicious, nutritious, mighty microgreens all over the bluegrass! For now, our mighty greens grow indoors. We use a soil medium and rainwater for spritzing and have additional lighting to encourage  strong, healthy growth from sprout to microgreen.  Our Sunflower Shoots aka Sunnys grow in about a week and our spicy Radish China Rose mature in about 5 days! We are delighted to present our crop to multiple stores and restaurants in the region. Our mission is to challenge ourselves to be creative in providing the community with nutritious, organic, beautiful microgreens. We are advocates for all natural health food and are developing skills to provide for our community through our joint partnership, Bluegrass Microgreens.

  During their adventures on the Caribbean Island of Vieques, Puerto Rico in the summer of 2013, Suzanna & Brandt became mutually interested in learning how to grow and sell Microgreens.  Their journey led them back to Kentucky in which they created, Bluegrass Microgreens, in September 2013.

!! -Lettuce Turnip the Beet- !!

You can now find our greens in the produce section at Good Foods Co-Op!

Bluegrass Microgreens & Sprouts has been working hard to partner up with local business to share our microgreens with the community.We are grateful for Seedleaf Farm and Good Foods Co-Op for being our first partners! Our greens are available for purchase in the Co-Op Food Store and will be served at Good Foods Cafe. Much appreciation for giving us the opportunity to partner up and recognizing the value of our healthy microgreens. Sometimes it feels like we are going up against a brick wall but every time we exchange our microgreens we are overwhelmed with gratitude for the relationships we are building. Being in Lexington has been a continuous transition and growing microgreens gives us a purpose to be here!

How to eat Microgreens!!

We know how healthy microgreens are...so how do you eat them? The microgreens have similar taste to the mature plant. The sunflower are very crisp with a nutty flavor, the radish microgreens have a spicy, pungent flavor. Microgreens are best consumed when eaten fresh and raw. Their bold, intense flavors and crisp consistency will not withstand cooking. The easy answer is to use them on cold salads or sandwiches. But they are also great in a burrito, on tacos, nachos, eggs, pasta dishes, rice with beans and used as garnish for any type of meat. Another great use of them is in pesto and dips. If you are a juicer, try adding them to your favorite juice combination or smoothies. There are numerous possibilities. Microgreens are a great addition to just about any dish, adding great nutrition to any meal. Check out our macaroni salad recipe below with sunflower shoots.

Microgreens are planted into a solid growing medium such as soil. To produce sprouts, seeds are placed in an enclosed container to generate high moisture and humidity levels which encourage rapid germination. The germinating seeds do not need light as they have started photosynthesis. They are washed repeatedly every day and are ready for consumption after a few days. Roots, stems and pale leaf buds are eaten. The baby leaf which is the first true leaf after the seed leaves (cotyledons) represents the epiphany of a true plant emerging into the light of the sun. This plant carries all the yearnings of new life for light, energy and growth.
Microgreens have been found to contain high levels of all the goodness that one looks for in nutrition. Minerals, vitamins, taste and flavor are all present at a higher ratio compared with adult plants. Microgreens are smaller and more tender than baby lettuce. They are much more flavorsome than sprouts. Microgreens are considered 'functional foods' with health-promoting and disease-preventing properties. A true gift from nature!
