Microgreens are planted into a solid growing medium such as soil. To produce sprouts, seeds are placed in an enclosed container to generate high moisture and humidity levels which encourage rapid germination. The germinating seeds do not need light as they have started photosynthesis. They are washed repeatedly every day and are ready for consumption after a few days. Roots, stems and pale leaf buds are eaten. The baby leaf which is the first true leaf after the seed leaves (cotyledons) represents the epiphany of a true plant emerging into the light of the sun. This plant carries all the yearnings of new life for light, energy and growth.
